To open up a sign shop you'll need a chest, a sign, and a piece of redstone. With a sign shop you can either buy or sell items. To do this simply follow the format below:
Line 1 must include capitalized letters in order to work. Lines 2 and 3 can consist of any details of the items for sale. Line 4 contains the price simply as a number value.
If you'd like to be even more specific and deal with pennies on the dollar, you can even place decimals in your prices up to two decimal places, i.e 100.50 or 3.99.
Let's go over some examples of how this is done.
Example #1, Selling Items to Players:
I want to open up a log shop that carries Oak Logs and sells them in stacks of 32 for 100 Rhines.
I place a chest down, both single and double chests work, then begin by placing a single stack of 32 Oak Logs in the first slot. Close the chest.
Place down a sign post (it doesn't need to be connected to the chest, but it needs to be accessible by players who want access to the shop). I then input the following on my sign:
After that's done, take a piece of redstone, left-click the chest containing your 32 Oak Logs, then left-click your sign shop. Go back to your chest and stock all the slots with the logs in the amount that you're selling. That's it, your shop is ready to sell to other players!
Example #2, Buying Items from Players:
I want to open up a shop that pays other players for their Red Stained Clay in stacks of 64 for 320 Rhines.
I place a chest down, both single and double chests work, then begin by placing a single stack of 64 Red Stained Clay in the first slot. Close the chest.
Place down a sign post (it doesn't need to be connected to the chest, but it needs to be accessible by players who want access to the shop). I then input the following on my sign:
After that's done, take a piece of redstone, left-click the chest containing your 64 Red Stained Clay, then left-click your sign shop. That's it, your shop is ready to buy from other players.

Helpful Tips:
1. When a [Buy] shop runs out of items simply restock items in your desired amount, then left-click the sign shop to turn your sign from red to blue to indicate that you have items for sale again. You don't need to re-connect signs to chests again. Simple!
2. You can connect chests together to expand your shop's chest capacity with hoppers. This is especially helpful if you buy or sell items in massive quantities and you want to keep items flowing.
3. The nice thing about sign shops is that customers don't need to access chests directly, so you can design storefronts that consist entirely of signs. This helps save space to buy/sell more products. Chests can be stored in the back of a store, out of sight, where you can restock or empty them discreetly.
